paleo instant pot chicken tortilla-less soup
- 1 whole organic rotisserie chicken (shredded and made in my InstaPot)
- 4 cups bone broth (saved from the chicken)
- 2 TBS coconut oil
- 1 onion
- 3 cloves garlic
- 1 28oz can organic fire roasted tomatoes
- 3 ripe tomatoes
- 1 poblano pepper
- 1tsp cumin
- 1tsp back pepper
- Sea Salt to taste
- Turn InstaPot to sauté mode and cook onion for 2 minutes.
- Add garlic, poblano pepper, seasonings and tomatoes and cook for another 3-5 minutes.
- Add bone broth and chicken and cook soup on low setting for 30 minutes.
- Garnish with your favorite toppings and enjoy!
