Paleo Instant Pot Chicken Tortilla-less Soup

Ingredients:

  • 1 whole organic rotisserie chicken (shredded and made in my InstaPot)
  • 4 cups bone broth (saved from the chicken)
  • 2 TBS coconut oil 
  • 1 onion 
  • 3 cloves garlic
  • 1 28oz can organic fire roasted tomatoes
  • 3 ripe tomatoes
  • 1 poblano pepper
  • 1tsp cumin
  • 1tsp back pepper
  • Sea Salt to taste

Instructions:

  1. Turn InstaPot to sauté mode and cook onion for 2 minutes.
  2. Add garlic, poblano pepper, seasonings and tomatoes and cook for another 3-5 minutes.
  3. Add bone broth and chicken and cook soup on low setting for 30 minutes. 
  4. Garnish with your favorite toppings and enjoy!
