paleo instant pot chicken tortilla-less soup
Ingredients:
1 whole organic rotisserie chicken (shredded and made in my InstaPot)
4 cups bone broth (saved from the chicken)
2 TBS coconut oil
1 onion
3 cloves garlic
1 28oz can organic fire roasted tomatoes
3 ripe tomatoes
1 poblano pepper
1tsp cumin
1tsp back pepper
Sea Salt to taste
Instructions:
Turn InstaPot to sauté mode and cook onion for 2 minutes.
Add garlic, poblano pepper, seasonings and tomatoes and cook for another 3-5 minutes.
Add bone broth and chicken and cook soup on low setting for 30 minutes.
Garnish with your favorite toppings and enjoy!
