paleo instant pot chicken tortilla-less soup


  1. 1 whole organic rotisserie chicken (shredded and made in my InstaPot)

  2. 4 cups bone broth (saved from the chicken)

  3. 2 TBS coconut oil

  4. 1 onion

  5. 3 cloves garlic

  6. 1 28oz can organic fire roasted tomatoes

  7. 3 ripe tomatoes

  8. 1 poblano pepper

  9. 1tsp cumin

  10. 1tsp back pepper

  11. Sea Salt to taste


  1. Turn InstaPot to sauté mode and cook onion for 2 minutes.

  2. Add garlic, poblano pepper, seasonings and tomatoes and cook for another 3-5 minutes.

  3. Add bone broth and chicken and cook soup on low setting for 30 minutes.

  4. Garnish with your favorite toppings and enjoy!
