protein packed collagen muffins {quick + easy back-to-school breakfast on the go}

Protein Packed Collagen Muffins

school starts next week, so being the type-a planner that i am, i have been cleaning, organizing and meal prepping to make our morning routine as easy as possible. this summer the kids and i have gotten pretty used to sleeping in, lazy mornings and zero routine- so the first week of school and early morning wake up calls might be quite the adjustment for us all. to make the adjustment as easy as possible i have been prepping quick on-the-go breakfasts that the kids can easily grab and go and this has been one of our favorites.


you guys all know my love for collagen is real! i put it in everything from my coffee to smoothies, soups and baked goods and consume at least one serving every day. i get asked a lot if i give collagen to my kids, or take it while pregnant or breastfeeding and the answer to all of those is yes. {always consult your dr. before starting to take any new supplement} collagen is the most abundant protein in our bodies. our hair, skin, nails, joints and tendons are all made up of collagen protein and at some point our bodies stop producing it {hence wrinkles and thinning hair} Vital Proteins Collagen Peptides is derived from grass-fed, pasture-raised beef bovine hide and dissolves in hot or cold liquid. being that is is completely flavorless, the possibilities are endless!

Ingredients:

1c full fat coconut milk

1 egg

2 ripe bananas

1/4c coconut oil (softened)

2 scoops Vital Proteins Collagen Peptides

1/2c raw honey

2c Kodiak buttermilk pancake mix

(Optional add-ins: chocolate chunks, walnuts, raisins or blueberries.)

Instructions:

Preheat oven to 350 degrees. Grease muffin pan or use muffin liner. In a medium size bowl smash the ripe bananas until all large lumps are gone. Mix together egg, honey, coconut milk and coconut oil until well combined. Add in the remaining ingredients and mix thoroughly. Use a ¼ cup-measuring cup to scoop batter into muffin pan. Bake for 15-18 minutes or until toothpick comes out clean.
