sweet potato pancakes

Sweet Potato Pancakes

if henry (my second son) could eat one food everyday for the rest of his life I think he would chose pancakes. i had some baked sweet potatoes i needed to use up and after making his high fructose corn syrup covered sugary pancakes, i was inspired to make a healthy alternative that i would actually allow him to eat everyday.


if you don’t have any pre-baked sweet potatoes just throw them in the microwave until soft. i just prefer them baked as i feel it brings out the natural sugar in them and makes them sweeter (i could be crazy).


these came out crispy on the edges and soft on the inside. i covered them in coconut and almond butter and they were SOOO good! walnuts, bananas and real maple syrup would also be delicious.

 

ingredients:

3 baked and peel sweet potatoes

1/4c almond milk

2 tbs ghee

1tsp cinnamon

2 eggs

use a fork and mash the peeled sweet potatoes in a bowl then add eggs, almond milk, collagen and cinnamon and mix well. melt 2tbs ghee in a heated skillet. use a 1/4c measuring cup to scoop mix into the heated pan. cook until golden brown on either side and top with your favorite toppings. enjoy!
